Also, I found this great blogspot today. A Year of Slow Cooking She has tons of recipes on there using her crockpot. They look so yummy. Plus, I saw that she had 387 recipes under gluten free. So, if you know anyone who needs a gluten free diet, this would be the site for them. I haven’t spent a ton of time looking at it, but what I have seen so far I thought looked great. I am always looking for new crockpot recipes. I cook most nights of the week. We usually limit ourselves to one meal out a week. And, I really do love cooking, but when I know that I have to be somewhere in the afternoon and it will be difficult to fix dinner in the evening, I love using my crockpot! It is my version of fast food, because all you do is throw the food in and then come home to a dinner already hot and ready.

Garden Food

We have started getting more food in from our budget saving organic garden. We made zucchini bread and canned squash for yummy squash casseroles throughout the year. Here are some pics. Having a garden really helps save a lot of money especially if you can save your seeds for the next year. It is also great to be able to feed your family organic fruit and veggies for next to nothing out of pocket. My mom and I have both been making zucchini bread.

Here is my recipe for zucchini bread.


3 eggs (whites only)

2 c. sugar

2 c. grated zucchini

3 tsp. vanilla

1 c. olive oil

1/2 tsp. salt

1 tsp. baking soda

2 tsp. baking powder

3 c. flour (I use whole wheat)

2 tsp. cinnamon

Mix egg whites and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with any cooking spray. Bake 50 to 60 minutes at 350 degrees.

Here’s my mom’s recipe:


3 eggs

1 cup oil

2c. dark brown sugar

2 c. grated zucchini

3 c. flour

1 tsp salt

1 tsp soda

1 tbs vanilla

1 cup chopped nuts.

Beat eggs, oil, sugar and vanilla. Add flour and mix. Stir in zucchini and nuts. Mix well. Grease and flour pans. Bake at 350 degrees for 1 hour in a 9×5 pan.
