Garden Food

We have started getting more food in from our budget saving organic garden. We made zucchini bread and canned squash for yummy squash casseroles throughout the year. Here are some pics. Having a garden really helps save a lot of money especially if you can save your seeds for the next year. It is also great to be able to feed your family organic fruit and veggies for next to nothing out of pocket. My mom and I have both been making zucchini bread.

Here is my recipe for zucchini bread.


3 eggs (whites only)

2 c. sugar

2 c. grated zucchini

3 tsp. vanilla

1 c. olive oil

1/2 tsp. salt

1 tsp. baking soda

2 tsp. baking powder

3 c. flour (I use whole wheat)

2 tsp. cinnamon

Mix egg whites and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with any cooking spray. Bake 50 to 60 minutes at 350 degrees.

Here’s my mom’s recipe:


3 eggs

1 cup oil

2c. dark brown sugar

2 c. grated zucchini

3 c. flour

1 tsp salt

1 tsp soda

1 tbs vanilla

1 cup chopped nuts.

Beat eggs, oil, sugar and vanilla. Add flour and mix. Stir in zucchini and nuts. Mix well. Grease and flour pans. Bake at 350 degrees for 1 hour in a 9×5 pan.
