I LOVE shortbread cookies. I know that they are horrible for me, but I have some anyway each Christmas. I always buy the ones in the blue tins, and they are so delicious. This year I decided that I would not buy any, but would find the best shortbread cookie recipe I could find and bake them. I used Ina Garten’s recipe here. They are so flaky and delicious. I actually just sprinkled sugar on top of mine because I wanted them to taste like the ones in the blue tins. They did get even better after a couple of days. I also cut mine in little circles. That way if I have one, I am not eating quite as many calories since they are smaller. I know that is funny to say with shortbread cookies. But anyway, these are the best shortbread cookies I have ever had. I don’t think I will ever go back to store bought again.
