Here is my budget saving birthday cake for my daughter today. Don’t look at the mess behind the cake. I have been cooking and canning 12 hours a day this past week. Anyway, she wanted a princess cake this year for her birthday, and I made her the one shown above. It was so easy to make!! I just made three 8 in cakes and baked a cake in a microwave safe bowl. I cut out a circular hole in the middle of each cake and frosted them all together. I then frosted the cake with a thin layer of icing and stuck it in the refrigerator for about an hour (my freezer was too full). This coat was just to make sure no crumbs got into the “real” icing layer. Then I got the cake back out. I wrapped the doll in plastic wrap and placed her in the middle of the cake. I iced the cake again. This part was so easy because I just put on the icing and then swirled it around to look like cloth. This is actually not the finished product. See the silver cans behind the cake, I decorated it with decorative edible beads etc. and wrote Happy Birthday on her dress as well. I used the free icing that I had gotten through couponing. I did make the cake from scratch, but that was just for fun. I could have used free cake mixes from the grocery store as well. My daughters “fixed” the dolls hair before I put her in the cake. They had the best time helping me! I can’t wait to eat it today at her birthday party. Although, it looks like it might just be us for her birthday party since we are snowed in. We will see. My family might still brave the weather and try to make an appearance. I hope that this inspires you to try and make a budget saving birthday cake rather than spending $20 at the store for one.
