Perennial Herbs
I love growing fresh herbs. They are ridiculously expensive at the store, and so delicious when you go out and pick them then use them in your meal. I have three small areas where I grow herbs. Some herbs live all year long and are perennials. Others are annuals and need to be replanted each year.
Herbs can be beautiful. I have a sage plant that actually produces the most beautiful purple flowers I have at my house. I plant these perennials as bushes in my front flower beds. They look beautiful for most of the year. They get a bit scraggily for about a month in February, and then they look beautiful again. It is also really convenient to just walk out the door and pick my herbs.
These are some of my favorite perennial herbs:
Sage
Sage: These grow to be about 1.5 to 2 feet tall. They have light green leaves and gorgeous purple flowers. The bush gets thick and looks really pretty for most of the year. This can be used to make homemade sausage and in dressings. You can also use it in cheese spreads and when cooking meat. However, homemade sausage is what I primarily use mine for.
Thyme
Thyme: Thyme only grows to be about a foot tall. I like to put it in front of my taller herbs since they don’t compete for sunlight. When I need thyme, I bring my scissors outside and cut off the number of stems that I need. Just take them inside rinse off the stem and pull the leaves off by running your fingers along the stem upside down. I use thyme in soups, homemade salad dressings, salads, and in some meats. It is best and freshest when there are flowers on the stem. However, I use mine year rounds and it still tastes great and is fresher than what you can get in a store.
Oregano
Oregano: I think that this plant is really pretty as well. It is a darker green than the sage. It is also a taller herb and can grow to be 2 feet tall. I plant it with my taller herbs in the back. These are used in many Italian dishes. Just pick off the amount that you need and it will continue to grow. Mint: Mint is a beautiful herb as well. However, it is like a weed. It will quickly take over. When growing mint you will want to grow it in a container or else away from your garden in an area that you don’t mind being taken over by mint. It is pretty easy to grow and is like a ground cover. I haven’t planted any at my new house, however, I am going to plant it on the edge of the woods away from my garden and grass and just have a pretty patch of mint growing. These are great in teas, homemade salad dressings, lamb, peas and carrots. Plus it just smells so good as you walk by it. It is a fun herb to grow. My kids used to like to eat it outside because they thought it smelled like gum.
Rosemary
Rosemary: This is another perennial. I think it looks like a mini evergreen tree. It grows to be 3 feet tall so you will want to plant it in the rear of your herb garden. It is great in meats. I love using it on roasted chicken. I also will use this in some salad dressings. It smells really good too as you walk by.
Chives
Chives: These are great little plants that I think look really pretty as well. They only grow to be about a foot tall. They are a pretty dark green color. They have a mild onion flavor. I use it in homemade cream cheese to make a spread. I also use it in casseroles, on top of tomatoes, in salads and most everything I would eat onions with. They are really tasty.
