Rotel is so expensive to buy in the store, and relatively easy to make from scratch. I just make a batch, and can it for use year round.
1 gallon ripe tomatoes, peeled and chopped
2 large green bell peppers, chopped
1 onion, diced
8 hot peppers, chopped
3/4 cup vinegar
1/4 cup granulated sugar
1 1/2 tablespoons salt
Mix all ingredients and cook for 45 minutes. Put in hot sterilized jars. Add 1 tsp of salt and 1 tsp of lemon juice to the top of each jar. Seal and process in a hot water bath for 15 minutes.
