
This has to be one of my all time favorite canning recipes. It is the only pizza sauce recipe I use now. I absolutely love it. It is also really low calorie and good for you as an added benefit, but regardless it is the most flavorful sauce I have ever made. This recipe is for canning, however, you can always make a smaller batch for your family if you don’t can. Since it has to cook down for a few hours though, I just think that canning is the way to go. It makes homemade pizza so easy! We have pizza about once a week, so we try to make sure to have at least 52 jars each year.
Pizza Sauce Recipe
5 quarts tomatoes, cut up (Learn how to quickly peel tomatoes here.)
1 green bell pepper
1 onion
4 bay leaves
1 tsp pepper
1 tsp chili powder
1 tsp garlic
2 tsp basil
4 tsp salt
1 tsp sugar
1 tsp paprika
1 tsp oregano
Peel your tomatoes.
Blend tomatoes, green pepper, and onion in food processor.
Add spices and bake in large pan at 325 degrees F for 3 or 4 hours, or until cooked down by half. If your sauce is still not thick enough, use ½ to ¾ tsp cornstarch with water and add to boiling mixture. Stir well. Put in hot jars and process to seal, using Blue Book for times. I add a teaspoon of lemon juice to the top of each jar to help maintain the color. Use 1 pint for 2 pizzas.
A double batch makes 15 to 18 pints.
