I am going to start listing some of the yummy canning recipes that we make today. Many of those recipes call for peeled tomatoes. I personally have no desire to use a knife and peel tomatoes, if there is an easier way, and there is.

There are 2 methods that I have used to peel tomatoes. I will share both with you, although my favorite is definitely the first. I discovered the first method by accident. I had frozen some tomatoes and then left them out to thaw. When I picked them up, the skins had come off.

How To Quickly Peel Tomatoes:

Method 1:

1. Wash your tomatoes.
2. Place your tomatoes in the freezer overnight.
3. Take them out in the morning and let them thaw. (They will need to be in a container that doesn’t leek since you will have tomato juice in the bottom of the container.)
4. The skins will automatically come off, and you will just need to cut off the end of the tomato before you process it.

Method 2:

1. Wash your tomatoes.
2. Put your tomatoes into a hot water bath.
3. Take them out with a slotted spoon and put them into ice water.
4. Quickly peel the skin off, once they have cooled, the skin will be stuck on again.

Here are the cons and pros of the different methods:

1. You have to move really quickly, so your fingers will get burned with the hot water bath method.
2. The skins do not peel off as easily with the hot water method.
3. You do have to have a lot of freezer space if you are processing a lot of tomatoes, and you have to wait until the next afternoon to begin processing them with the freezer method.
