This is our family’s favorite canned salsa recipe. We got this recipe from our good friend, Sharon, who said I could share it with all of you. I hope that you enjoy this as much as we do!
  • 7 quarts tomatoes, peeled & chopped
  • 4 cups long green chilies, chopped
  • 5 cups chopped onions
  • 1 cup jalapeno, minced
  • 7 cloves garlic, minced
  • 2 cups lemon juice
  • 2 T. Salt
  • 1 T. Black pepper
  1. Combine ingredients and simmer 10 minutes
  2. Add 3 T. oregano
  3. cup cilantro
  4. Simmer 20 more minutes.
  5. Place in pint jars and process in boiling water bath for 40 minutes.

    I’m thinking about making this over the weekend because this sounds about perfect for what I want. But, if the tomatoes are fresh, do they need to be boiled down first to get a thicker, sauce-like texture? Also, about how many lbs. of tomatoes would I need for this? Thanks!

    • It cooks to the texture that I like as it cooks down. For this recipe, it is 7 quarts. I always just measure in quarts, so I am not sure on the pounds. I hope that you enjoy it! Rene

    Looks great! I would love to try making salsa again, as mine wasn’t spicy enough last year and this one looks like it has a bit more kick.

      Natasha, to really increase the spiciness, you can leave some of the seeds in the jalapeños. We do that with a couple of jars for really spicy salsa. I hope that you enjoy it!
