My sister ‘n law brought me some fresh kale out of her garden. I love kale, and don’t know why I don’t usually plant it. However, after this dish, I will definitely be planting it in the future!! I was just going to stirfry the kale with some onions, but then I started thinking about creamed spinach, so I kind of combined those recipes to come up with this. It was SO delicious!! I could have eaten the whole dish. I hope that you enjoy this! I had one grocery bag of kale, so I am guessing that I used about a gallon size bag of kale.
Creamed Kale With Caramalized Onion
Gallon bag of kale, washed, center stem cut out and leaves torn
3 cups of milk, warmed
3 T flour
3 T butter
pinch of nutmeg
salt and pepper to taste
1/4 cup parmesan cheese
3 large onions, sliced
2 T butter
1 T sugar
salt and pepper to taste
Wash your kale and cut out the center stem. Bring salted water to a boil and add your torn kale to the water. I boiled the kale about 10 minutes because I wanted it to still have some body, but if you like your kale limper, you can boil it for 15 minutes.
Melt butter in a saucepan. Add the flour and cook for 2-3 minutes. Add the warmed milk, nutmeg, Parmesan cheese, salt and pepper and wisk until thickened.
Melt butter in saucepan for onions. Add onions, sugar, salt and pepper. Cook until browned.
Add the sauce to the kale. Mix the onions into the kale, or top with the onions.

I absolutely love kale. It is probably my favorite green. And, it grows so well around here. I eat it all the time. I love it raw, cooked, just about anyway, but this is my favorite “indulgent” way to eat it. (-:

I tried this recipe yesterday. It was SO GOOD over baked potatoes! I doubled the cheese, though–I was using monterey jack (that’s what I had) and it didn’t seem like enough. :-)
