Budget Recipe: Bean Taco
I had mentioned earlier that there are several recipes that I can throw together really quickly that my family really enjoys, plus it saves a trip to a restaurant. I figured that I would one of our favorites. This is such an easy meal. You just open the cans, heat and serve. You can’t get much easier.
Bean tacos Recipe:
1 can black beans
1 can kidney beans
1 can corn
1 jar homemade Rotel (or from the store)
1 T dried, minced onions
2 tsp cumin
2 tsp chili powder
cheese and sour cream to top
guacamole
Mix all of the ingredients together except the cheese and sour cream. Heat, add cheese, guacamole, and sour cream and serve with tortillas.
Tortillas are pretty easy to make and freeze in advance. We also buy flat bread from Costco to keep on hand for quick meals rather than eating out. (Yes, I coupon PLUS shop at Costco. . . shocking I know.) (-:
