We went on vacation this past week and had a great time! We went to Pennsylvania. I was able to talk to a few Amish women who gave me some great ideas for how to use up those end of season green tomatoes. I am so excited to try out these ideas. Once I make them, I will try to post recipes of the ones that I loved so that you guys can try them as well. We were also able to get three bushels of organic, wax free apples. Yay!!
What to do make with green tomatoes:
- green tomato salsa
- green tomato relish
- green tomato pickles
- green tomato pie
- India relish
- green tomato soup (I am going to make three different kinds.)
- And of course as all southerners know, fried green tomatoes
So, here is my plan for today. It is rather ambitious . . . but hey, I might as well aim high. Many of you have asked me how I manage to can so much of our food, so I thought I would outline my plan. We are taking off one day from homeschooling to can. I am bringing up the kitchen set for my little ones to play with while I can. I will wear my newborn in a Moby wrap except when I am around the canner. I love this wrap. I can have both hands free, nurse and work at the same time! I hope to put up at least 100 jars today.
- Pick the dill and green tomatoes from the garden.
- Make green tomato relish. (This has to cook for 2-3 hours, but only has to can for 10 minutes.)
- Start dinner in the crockpot.
- Make green tomato soups. There are 3 that I want to try. I have 4 eyes on my stove, so while the relish is cooking down, I can start each soup. Most only take about 30 minutes to cook before they are ready to can. I am going to start with the one that takes the longest. Then, I will just keep working on each soup, canning as they are done.
- Make vegetable beef soup. I know that has nothing to do with tomatoes, but I have needed to make some, and my canner will be out anyway.
- Make zucchini bread and squash bread batter and bake throughout the day.
- Make green tomato salsa. I will should have an eye free from the tomato soups by the time I get to this.
- Start my pickling liquid.
- Make India relish.
- Make green tomato pickles.
- Can the vegetable soup.
- Process the 3 bushels of apples. I am planning on dehydrating at least 2 bushels and then making applesauce with the rest.





I can’t wait for you to post the recipes! I had absolutely no idea what to do with the green tomatoes out in the garden, and hate to let them go to waste!
