I personally love yucca, however, I was talking to my mother the other day, and she had no idea how to prepare yucca. Yucca is a delicious vegetable that is very similar to a potato. I make mashed yucca all the time. It is so delicious!! Yucca has slightly more flavor than a potato, and is a little sweet. You also have to cook it a little longer.
How To Prepare Yucca:
1. Peel the yucca. Yucca is harder than a potato, but it is easy to peel with a peeler. If you have trouble getting it started, you can slice a little of the skin off with a knife to get it started. Peel the brown skin off until the white flesh is revealed.
2. Cut the yucca into similar sized chunks.
3. Place the yucca into a pot of water and bring to a boil. Cook the yucca until it is tender. This usually takes 45 minutes until 1 hour. You want the yucca to be the same consistency of potatoes that you have boiled and want to mash.
4. Add warm milk, butter, salt and pepper to taste. Mash the yucca with a potato masher. You do want to make sure that you add warm milk so that the texture is not pasty.
Mashed yucca is so delicious, you might want to give up mashed potatoes . . . well, almost. You can also boil the potatoes & serve with onions like you would serve potatoes and onions. Basically any way that you use potatoes, you can use yucca.
