Menu Plan Monday: Easy Version Chicken Crockpot Recipes

I have a CRAZY week ahead of me! I have doctor’s appointments for 2 kids, I am babysitting my nieces and nephews, I am a panelist for a Twitter party, I have quite a few meetings . . . Basically, I will be swamped. So, the goal of my menu plan this week is quick, easy, fast recipes! I will be using my crockpot quite a bit this week as well, so that I can get dinner on first thing in the morning.

Weekly Menu Plan:

Monday: BBQ chicken, corn on the cob, green beans

I am just going to throw in some chicken, barbecue sauce and some water, and let it cook all day. The corn is already cleaned, and I just have to boil it for dinner tomorrow. I will just heat up a can of green beans with a little oil and garlic salt.

Tuesday: Crockpot chicken tetrazzini with leftover corn on the cob and green beans from Monday night.

Wednesday: Italian chicken

I am going to put 4 chicken breasts, 1 onion, 1 bell pepper, and 1 cup of sliced mushrooms into the crockpot. I will top it with homemade pizza sauce

Thursday: Chicken pot pie

Friday: My one year old son’s birthday party!! I am actually not sure what I am going to be making yet . . . obviously a cake . . . probably guacamole since he loves it . . . but I am not sure what else. He will only turn one once, so I am still planning.

Saturday: Leftovers

Sunday: Orange chicken over jasmine rice
