Pumpkin Bread Recipe

This is my mother’s budget recipe for pumpkin bread. I absolutely LOVE it! It is one of my favorite things about the fall. I just love it when the pumpkins start coming in from our organic garden, and we start making pumpkin bread!!  This pumpkin bread is very moist. The top of the crust is slightly crunchy and crumbly, and it is just perfect! The bread freezes very well. The top won’t be slightly crunchy after it is frozen, but it is still delicious!

This is my mother’s recipe for pumpkin bread. I grew up eating it. It is SO delicious, and really moist! I have tried dozens of pumpkin bread recipes, but I always come back to this one. It is SO GOOD! We have eaten it without raisins and nuts plenty of time, and it is still delicious, but I do love adding them.
Ingredients
  • 2/3 cup coconut oil (or cooking oil)
  • 2 cups white sugar
  • 2/3 cups brown sugar
  • 4 eggs
  • 1 tsp vanilla
  • 2 cups cooked, mashed pumpkin
  • 2/3 cup water
  • 3 1/2 cups flour
  • 1/2 tsp baking powder
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cloves
  • 2/3 cup ground walnuts (I have also used pecans)
  • 2/3 cup raisins (optional)
Instructions
  1. Cream oil and sugars, beating well. Add eggs and vanilla, and mix well. Stir in pumpkin and water.
  2. Combine flour, baking powder, baking soda, salt, cinnamon, and cloves. Slowly add to creamed mixture, mixing well. Fold in walnuts and raisins. Spoon into 2 well-greased and floured 9x5x3 inch loaf pans; bake at 350 for 1 hour and 10 minutes or until done.
