Here is a great budget recipe for pumpkin muffins. Now that it is fall, I can’t seem to get enough pumpkin! Yummy! I LOVE my pumpkin bread recipe, but I wanted to come up with a different recipe for pumpkin muffins. They turned out really well. They were super moist and yummy! I froze half of the batch, and they freeze really well.

- 1 cup pumpkin puree (Just use a 15 oz. can of pumpkin puree if you don’t make your own.)
- 1 egg
- 1/2 cup plain Greek yogurt (can also substitute sour cream)
- 1/2 cup butter
- 1 1/2 cup flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
- 1 1/2 teaspoon cinnamon
- Preheat oven to 400 degrees.
- Mix pumpkin, yogurt, vanilla and egg.
- Combine the flour, sugar, baking powder, baking soda, nutmeg, salt, ginger and cinnamon.
- Cut the butter into the flour mixture until well incorporated.
- Pour the pumpkin mixture into the flour mixture and mix well.
- Place in muffin tins.
- Bake for 25 minutes
