Since, I love budget recipes, I really love this recipe for pumpkin seeds! When I bake my pumpkins for pumpkin bread and pumpkin muffins, we scoop out all of the pumpkin seeds first. Pumpkin seeds are so yummy, plus they are really good for you!
Pumpkin seeds contain L-tryptophan, which naturally helps prevents depression. There are studies that they can even help prevent kidney stones (which means I really want to eat them!) They also contain phytosterols which helps to lower your LDL cholesterol and prevent cancer. And, they are high in magnesium. It is hard to believe that something that delicious for you is good!
| Cinnamon Sugar Pumpkin Seed Recipe |

- 2 cups pumpkin seeds
- 1/4 cup melted butter
- 2 tablespoons brown sugar
- 1/4 cup white sugar (split into 3 portions)
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- pinch of salt
- Preheat oven to 350.
- Mix all of the ingredients together other than 2/3 of the white sugar.
- Make sure that the seeds are well coated.
- Spread the seeds out in a single layer.
- Bake for 15 minutes.
- Add 1/2 of the sugar that is left and stir.
- Bake 15 more minutes.
- Add the rest of the sugar and stir.
- Bake 15 more minutes.
- Allow to cool and then serve. You can store them in an air tight container after they are cooled.
