I love to make a huge pot of beef stew in the crockpot with plenty of leftovers. I just added the veggies that I had available, so I am sure that you can adjust this “recipe” as you see fit for your family.

This is a hearty soup great for cooler months. If you have a garden, this is also a really frugal meal. It only cost me about $3 for the ingredients!
Ingredients
- 2 lbs stewing beef (This was from the organic cow we bought, so $3)
- 5 potatoes diced from the garden
- 6 carrots chopped from the garden
- 1/2 head cabbage chopped from the garden
- 4 sprigs fresh parsley from the garden
- 4 sprigs of fresh thyme from the garden leaves removed
- 1 tsp salt
- 1 tsp pepper (free with coupons)
- 2 onions diced from garden
- 6 cups chicken stock I had made from canning chickens earlier this week (used veggies from the garden)
Instructions
- Add everything to the crock pot and cook it on low for 6-8 hours.
