Whole wheat zucchini muffins

I love zucchini muffins. I wanted to come up with a healthier version of zucchini bread using whole wheat and honey, and turn it into muffins so that it was easy to freeze and have on hand for breakfasts throughout the week. I had plenty of frozen zucchini and squash that I had shredded and frozen from our summer garden, so I used that in this recipe. It turned out really well, and I am very excited, because there is nothing unhealthy at all in these muffins, and my kids love them!  I am actually sitting here munching on one of these as I am writing this post. Yummy!

A healthy and delicious whole wheat, zucchini and honey muffin recipe. I prepared quite a few of these muffins, since I am freezing them. I place 12 muffins in each bag since we have 6 people in our family. This recipe makes about 72 muffins, so if you are not planning on freezing these, you might want to quarter this recipe.
Ingredients
  • 9 cups whole wheat flour
  • 2 teaspoons cinnamon
  • 3 teaspoons baking soda
  • 1 1/2 teaspoon sea salt
  • 2 teaspoons nutmeg
  • 1 1/2 teaspoon baking powder
  • 3 cup honey
  • 6 cups shredded zucchini (I actually used a mixture of squash and zucchini in mine since that is how I had stored it.)
  • 1 1/2 cup melted butter
  • 6 eggs
Instructions
  1. Preheat oven to 400 degrees.
  2. Combine flour, cinnamon, baking soda, sea salt, nutmeg and baking powder in a large bowl.
  3. Stir in honey, zucchini, eggs and melted butter.
  4. Place into muffin tins and bake for 20 minutes.

    Dividing the recipe by 3, so “thirding” it is more reasonable for my family of 3, so thought I could help other and provide the conversion.
