I was able to find an incredible price on strawberries earlier this week. I bought several pounds of strawberries, and ended up coming up with this strawberry muffin recipe! Sorry that the picture is so fuzzy. I couldn’t find my camera, so I tried using the camera on my phone, and it did not turn out as well.

Strawberry Muffin Recipe

This is a delicious fresh strawberry muffin recipe! I quadrupled the recipe and froze the leftovers. They froze great!
Ingredients
  • 2 eggs
  • 1/2 stick butter at room temperature
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups of chopped strawberries
Instructions
  1. Preheat oven to 375 degrees.
  2. Mix eggs, butter and sugar together.
  3. Add milk, sour cream, vanilla and mix.
  4. Combine flour, baking powder and salt in a separate bowl.
  5. Slowly add the dry ingredients and mix.
  6. Stir in the chopped strawberries.
  7. Bake 25 minutes.

    Sounds delicious! I found a good price on strawberries and I think they went bad before we got home!! Or they were already bad! I miss strawberry season!
