I love kohlrabi bulbs. They are so delicious to eat! However, I have wanted to try the greens as well, and so I came up with a recipe that combined the bulb and the greens. The greens are a little tough, but the bulb is soft and the onions are slightly sweet, plus the salty sausage. It is really delicious!
Ingredients
- 3 kohlrabi
- 1 onion, chopped
- 1-ounce sausage
- salt and pepper to taste
- 2 teaspoons of oil
Instructions
- To prepare the kohlrabi:
- Trim the kohlrabi bulb, and chop it into cubes.
- Cut the kohlrabi greens into small pieces.
- Boil the kohlrabi cubes in salted water for about 15 minutes until soft.
- Cook sausage and onions until done with a little bit of oil.
- Add the kohlrabi greens, and mix with the sausage and onions.
- Then add the kohlrabi cubes and stir.
- Add salt and pepper to taste.

This looks really good. I love kohlrabi but never quite come up with creative ways to cook it. I usually do a basic stir fry too, but the addition of sausage sounds great. I wonder if you boiled the greens a bit before sauteing them, would they be a little more tender?
That is a good idea. I will try that next time and see how it works.
kohlrabi is great! The CSA drops it off almost every week right now. I actually like to julienne it and just eat it on it’s own for a snack. I love the idea of cooking it though – well done!
