Here are some pictures of some of the produce from our garden. My daughters and I had a lot of fun picking and eating it this morning. I love gardens. It seems like such a miracle to watch a seed become a plant and then food. These are pictures of the blackberries, strawberries, blueberries, squash, potatoes and purple beans we picked. Enjoy my budget saving garden pics!

Garden Food

We have started getting more food in from our budget saving organic garden. We made zucchini bread and canned squash for yummy squash casseroles throughout the year. Here are some pics. Having a garden really helps save a lot of money especially if you can save your seeds for the next year. It is also great to be able to feed your family organic fruit and veggies for next to nothing out of pocket. My mom and I have both been making zucchini bread.

Here is my recipe for zucchini bread.


3 eggs (whites only)

2 c. sugar

2 c. grated zucchini

3 tsp. vanilla

1 c. olive oil

1/2 tsp. salt

1 tsp. baking soda

2 tsp. baking powder

3 c. flour (I use whole wheat)

2 tsp. cinnamon

Mix egg whites and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with any cooking spray. Bake 50 to 60 minutes at 350 degrees.

Here’s my mom’s recipe:


3 eggs

1 cup oil

2c. dark brown sugar

2 c. grated zucchini

3 c. flour

1 tsp salt

1 tsp soda

1 tbs vanilla

1 cup chopped nuts.

Beat eggs, oil, sugar and vanilla. Add flour and mix. Stir in zucchini and nuts. Mix well. Grease and flour pans. Bake at 350 degrees for 1 hour in a 9×5 pan.

Anyone have another good recipe we can try? We have lots of yummy budget saving zucchini still coming in.

Our Garden

As I have mentioned before another way we save money on our budget is by splitting an organic garden with four families. It is really starting to come in. I thought I would post some pictures. Don’t let the size overwhelm you. As I said we have four families splitting the work. This is great because if one family is out of town for a week, the garden still gets picked and canned.

The potato beetles have been awful this year. There is bug patrol every morning for these guys.

Our limas are coming in. Yay!

I think it such a miracle and amazing to watch these seeds become plants and then food. Plus, you get great food for free after the cost of seeds and mulch.

Garden vegetables


My budget saving garden is coming in. We had salad for lunch with all different types of lettuce. Then for supper we had sugar snap peas, one of my favorites. I even came home and made a snack tonight with rice noodles, bean sprouts, chili peppers and sugar snap peas. Yummy!! Lots of fresh, organic veggies for free. I love gardening!!! My parents, grandparents and my family all work on the garden, so we are able to have a larger one. I have attached a picture of part of the garden taken a couple weeks ago. The frugal, health nut part of me loves the summer when we can basically eat for free. We also were able to buy a quarter of a grass fed, organic cow so we really should not have to spend any money on food soon other than a few staples. We are fortunate to also have access to range fed chickens that produce lots of eggs. Are any of you growing a budget saving garden, if so I would love to hear about it!
