Have you ever realized at the last second that you had to make a dessert and you had nothing and no time to bake? Well, that happened to me today! So, I quickly went searching through my kitchen to see what I could come up with, and came up with these Oreo balls. They were actually a huge hit! AND, they literally took me 10 minutes to make from start to finish. (I know because I had about 15 minutes to come up with something, and I actually had a couple of extra minutes!)  I just used the sprinkles that were leftover from the gingerbread men that we decorated earlier this week so the chocolate didn’t have to be perfect.

Quick, easy and yummy Oreo balls!
Ingredients
  • 1 package Oreo cookies, crushed (I used my food processor.)
  • 8 oz. cream cheese
  • 1/2 tsp. vanilla
  • 1/4 cup crushed Walnuts
  • 2 cups chocolate chips melted
  • sprinkles
Instructions
  1. Crush the oreos and walnuts in a food processor.
  2. Add the cream cheese and vanilla to the food processor.
  3. Remove the mixture, and make sure it is thoroughly mixed.
  4. Roll the mixture into balls.
  5. Dip in the melted chocolate.
  6. Top with sprinkles.
  7. Refrigerate and serve.

Sweet Honey Carrots Recipe

 

 

 

 

I love sweet carrots! I discovered just how much I loved them when I had them at Kimono’s. I came home and decided I needed to figure out to to make them like theirs. Mmmmm . . . they are so good! My kids love to eat raw carrots, but I am not a huge fan of raw carrots. I love eating carrots this way though!

Honey sweet carrots. Yum!
Ingredients
  • 1 pound carrots
  • 2 tbsp. butter
  • 2 tbsp. honey
  • 1/2 tsp. salt
  • pinch of nutmeg
  • pinch of cinnamon
  • 1 tsp. freshly grated ginger
  • 1 tsp. lemon juice
Instructions
  1. Slice carrots at an angle into 1/2 inch pieces.
  2. Steam carrots until slightly softened.
  3. Melt butter and honey in a pan.
  4. Add the rest of the ingredients and stir.
  5. Add the carrots that are slightly softened and gently stir until covered.
  6. Allow to cook a couple more minutes until softened.
  7. Serve.

Fresh Kale Salad

I have been trying to come up with a kale salad recipe that I absolutely loved. So far, I had come close, but not succeeded, until this recipe. It was beyond delicious. Seriously one of the favorite things that I have ever made. Just to give you an idea of just how good it was . . . even my salad phobic kids ate it AND asked for more. Mmmmm . . . writing this post is actually making me crave this salad. At least it is a super healthy craving!! So, next time that you are at the store, buy some kale and try it out. You know you want to! (-:  The picture might look plain with only greens, cheese, bread and dressing, but it is full of flavor. Seriously, I am going to have to go make some more after I finish this post!

Kale grows in cold weather, and I love it! I also love salad, but kale can be tough when you try to eat it raw. I love lemon juice and olive oil dressing, and I thought that the lemon juice might work on the kale and make it a little more tender. I have been playing around with a recipe, until I came up with an incredibly delicious salad! Even my kids loved it. It is seriously yummy. So, if you like to eat fresh, raw greens in the cooler weather, give this a try. It is really easy too.
Ingredients
  • 5 cups of kale with the stem portion of the leaf removed
  • 1 cup asiago cheese
  • 1 slice of my whole wheat bread toasted with butter and garlic salt, then crumbled
  • Dressing:
  • 3 T extra virgin olive oil
  • freshly squeezed juice form one lemon
  • 3 cloves of garlic, minced
  • salt and pepper to taste
Instructions
  1. Tear kale leaves.
  2. Add the dressing.
  3. Allow the salad to sit for a few minutes. I allowed it to sit for a couple of hours before dinner.
  4. Add the cheese and breadcrumbs and mix.

Menu Plan 12/4

It is another busy week for us this week. I am actually surprised to see how little we will be at home this week! The kids and I are going out of town for two days, and my husband has to be at the church every night this week. It seems like December is always busy, but full of fun!

Monday: dinner with my in laws

Tuesday: at my in laws.

Wednesday: (My hubby’s birthday, so we are having his favorite foods)

Buffalo Chicken Pizza – with homemade pizza dough (I am just going to mix butter and Frank’s red hot sauce together. I will add shredded chicken and carrots. That mixture will go on the pizza, and then I will add mozzarella, and blue cheese.)
Cheese Pizza for the kids – with my homemade pizza sauce
Some sort of cake

Thursday:

out to eat since my in laws are coming into town for the Christmas play that my hubby is playing in

It can definitely be cheaper to make your own cakes than buy a cake. This was the cake that I just made my wonderful hubby for his birthday. The cake was still warm when I iced it because I ran out of time before the party, but it was actually really nice having warm cake! Usually, I wait for the cake to really cool though so that it is easier to stack and ice. I was hoping the whole time that it wouldn’t fall apart since I hadn’t let it cool. Fortunately, it made it! (-:

I couldn’t wait to bite into the cake AND it did not disappoint at all! It was so moist, and rich and delicious!! Come on, you know you want to try it . . . I wish I could have given you all a slice. As I was typing this up, I actually had to sneak back to the kitchen, and cut myself another slice. Mmmmmm . . .

I have been wanting to try a new cake for my husband’s birthday. I knew that I wanted it to look like an Oreo cookie, and I wanted to use Coke, so I wrote this recipe out, and it turned out perfectly! I was really excited!!
Ingredients
  • For the Chocolate Cake Layers
  • 1 1/2 cups Coca-Cola
  • 2 cups sugar
  • 1 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1/2 cup oil
  • 1/2 cup buttermilk
  • 2 eggs
  • 3/4 cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 cup butter
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 hershey bar, finely chopped
  • 8 Oreos crumbled
  • White Cake
  • 1/2 cup buttermilk, room temperature
  • 3 egg whites
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1 1/8 cups flour
  • 1 2/3 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup of softened butter
  • 7 Oreos
  • Oreo Frosting:
  • 1 cup Powdered sugar
  • 8 oz. Cream Cheese, room temperature
  • 8 crushed Oreos
  • 2 cups whipping cream
Instructions
  1. Chocolate Cake Instructions:
  2. Preheat oven to 350 degrees.
  3. Grease and flour 2 ten inch round cake pans.
  4. In a small sauce pan, bring cocoa, oil, Coca-Cola and butter to a boil.
  5. Remove mixture from heat.
  6. Combine the salt, sugar, baking powder, baking soda and flour, add into the boiling mixture and beat well.
  7. Beat in the buttermilk, vanilla and eggs one at a time.
  8. Stir in the chopped chocolate bar and Oreos
  9. Pour into the cake pans.
  10. Bake at 350 degrees for 30-35 minutes.
  11. White Cake Instructions:
  12. Preheat oven to 350 degrees.
  13. Grease and flour one 10 inch cake pan.
  14. Combine buttermilk, eggs whites, vanilla extract and almond extract in a small bowl and set aside.
  15. Combine flour, sugar, baking powder and salt in a mixer.
  16. Add butter and beat.
  17. Add the milk and beat.
  18. Add the Oreos and gently stir.
  19. Pour the cake into the greased cake pan.
  20. Bake 30-35 minutes, until done.
  21. Oreo Frosting:
  22. Mix whipping cream, cream cheese and powdered sugar together until whipping cream is forming peaks.
  23. Stir in crushed Oreos.
  24. To Make The Cake:
  25. Place a piece of the Coco-Cola Cake on the bottom.
  26. Frost the top of the cake with Oreo Frosting.
  27. Add the white cake on top of the frosting.
  28. Frost the white cake.
  29. Add the second Coco-Cola Cake on top of the white cake.
  30. Frost the top of the cake with Oreo Frosting and garnish with Oreos.
