Cranberry Walnut Orange Bread

I love coming up with new budget recipes! I had some extra oranges, and I had really wanted to try to make orange bread. I decided to modify an Irish soda bread recipe that I came up with a couple of years ago and try to make some orange bread. This was SO good! It was moist and sweet and just delicious! This can easily be modified to make orange muffins.

Orange Cranberry Walnut Bread

Ingredients
  • 1/2 cup butter at room temperature
  • 1/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup orange juice
  • 1 teaspoon vanilla
  • 2 tablespoons orange zest
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
Instructions
  1. Preheat the oven to 350 degrees.
  2. Cream the butter, white and brown sugar together with a mixer.
  3. Add the eggs and beat in one at a time.
  4. Add the milk, orange juice, vanilla and orange zest.
  5. Mix the flour, baking powder and baking soda together.
  6. Slowly mix in the dry ingredients.
  7. Stir in the cranberries and walnuts.
  8. Pour into greased loaf pans and cook 30-35 minutes.

Blueberry Lemon Muffin Recipe

I love getting in the kitchen & coming up with new budget recipes. My kids really wanted muffins for Labor Day last week. They helped me make four different kinds. My eldest three children love to cook just as much as I do! My husband’s favorite muffins are blueberry muffins. We decided to make them with a twist by adding lemon to them. If you prefer plain blueberry muffins, you can just leave out the lemon juice & lemon zest. We loved the addition though! I usually use whole wheat flour in my muffins. They are slightly denser, but we still enjoy them. I wrote out the recipe with all purpose flour, but you can easily substitute with whole wheat flour. I used the blueberries that we have frozen from our summer organic garden! Yummy!

These blueberry muffins are light, fresh & delicious! I love the way that the lemon brightens the flavor, plus you have the sweetness of the blueberries. They are SO good!
Ingredients
  • 1 1/2 cups all purpose floud
  • 3/4 cup white sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup softened butter
  • 1 egg
  • 2 tsp vanilla
  • juice of half a lemon
  • 1/2 teaspoon nutmeg
  • lemon zest, 1/4 lemon
  • 1/3 cup milk
  • 1 cup frozen blueberries
  • Topping:
  • 1/3 cup all purpose flour
  • 1/4 cup butter, cubed
  • 1 teaspoon ground cinnamon
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
Instructions
  1. Preheat the over to 400 degrees.
  2. Combine all dry ingredients for the muffins (flour, sugar, salt, baking powder, nutmet).
  3. Beat butter, egg, milk, lemon, lemon zest and vanilla.
  4. Slowly add in dry ingredients and mix.
  5. Dust the blueberries in a little bit of flour, then fold them into the batter.
  6. Fill the muffin tins almost to the top.
  7. Mix all topping ingredients with a fork.
  8. Top the muffin batter with the topping mixture.
  9. Bake 20-25 minutes.
